Today I completed the first month of walking. Molly and I had plenty of company today at the park, and why not! It was a fantastic day to be out walking. It was unusual weather for January.
Earlier in the day, Billy and walked along the field beside the B&B, up to the top of the hill where there is a cemetery called the Keenytown Cemetery. The cemetery is quite old, as the burial records we were given date from @ 1823 to 1883. I don’t know much about the families buried there, but one family “Gleim” had a connection to our property.
The earliest deed that we have for our property dates back to 1887, when the property, which was part of the William Craighead homestead, was sold to Samuel A Gleim. After Samuel A Gleim, there were four deeds recorded for this property. Sometime, I would like to find out more about the people and the South Middleton area.
One place I could get more information on this property would be the Cumberland County Historical Society. http://www.historicalsociety.com/.
The Cumberland County Historical Society is conveniently located in downtown Carlisle. They are a very active organization and constantly promote the history of the area. There are changing exhibits, monthly lectures, walking tours and an extensive library. They even have a research service for a fee. (That would be convenient.)

New England
Day 29 - 42°- mild, partly sunny - Spring Meadows Park

Day 28 - 44° - partly sunny, cold - E. Hartford, CT
Day 29 - 38° - partly sunny, windy - Windsor Locks, CT
The past few days Billy and I were in New England making a whirlwind trip to visit our family. My walks took me down to the beach at Cape Cod and around the neighborhoods where our family live.
Cape Cod was about a 10 hour ride from Carlisle. Our daughter and family live there.
We walked around Falmouth, where Billy and I lived before moving to Carlisle. If you go to Cape Cod, this is a “perfect” Cape town; a quaint main street with mix of interesting shops, restaurants and a 15 minute walk to the beach. We stopped in our favorite place in Falmouth Center - Liam Maguire’s Pub.
We walked down Main Street toward Shore Drive and the beach. From there, we looked out over Nantucket Sound; on a clear day one can see Martha’s Vineyard. Although it was foggy and we couldn't see too far, it was delightful being near the water.
After a “short” visit with our daughter and her family, we headed off to the Hartford, Connecticut area. It was great to catch up with the rest of family with our walks, talks and meals. Our son and daughter-in-law took us to a terrific seafood restaurant. Billy and I enjoy so much about Carlisle, but one thing the area is missing is great seafood! - lobster, shrimp, steamers, baked stuffed flounder. This was a treat for us!
My sister-in-law served us a delicious egg casserole, which I am going to cook next weekend for our guests. If it receives a “thumbs up”, I will post the recipe.
The ride home from the Hartford area of Connecticut was about 5 hours.
So if you are traveling to New England, and passing through Carlisle, you might consider a stop at the Red Cardinal B&B. We can fill you in on some of our favorite places in that area.

Valentine Special
Day 25 - 42° - sunny and mild - Spring Meadows Park
It was a lovely afternoon for walking. The park was quiet, peaceful and warm so Molly and I enjoyed a longer walk than usual.
I was thinking of the Valentine special that Billy and I are offering at the Red Cardinal B&B during the month of February. We tried to think of something different than the usual flowers, chocolates or candlelight dinner, and we came up with “Romance and Dance”.
If a guest makes a reservation for 2 or more nights from February 12 through February 29, we will give them a dance lesson. We would roll up the carpet in the living room and teach the basic steps of swing, cha-cha and foxtrot. Since we enjoy dancing, we thought this would be fun.
We already have had someone make an inquiry, so I am excited to see how things develop.

Planning Ahead

The last couple of days since the snowfall have been damp and cold. Today, however, is much nicer. It is warm, and much of the snow has melted.
On Sunday after church , I walked around the Boiling Springs School parking lot. It was the only place in town that had been plowed and made for an easy walk. Later, Billy and I headed off to Fiddlers to watch the Patriots beat the Ravens. GO PATS!!
Fiddlers is a popular restaurant near the Red Cardinal B&B, and one that we often refer to our guests.
On Monday, as I walked along Lerew Road, I was thinking of a couple of recipes in which I could use up the blueberries in the ‘Fridge. When I got back, I spent the afternoon baking blueberry banana bread and blueberry ginger bread. I wasn’t sure if the blueberry ginger bread would be a good combination, but it was tasty. These breads will be a perfect breakfast treat for our guests who will be coming for Super Bowl weekend.
Today, I met with a representative from the American Red Cross in downtown Carlisle. The Cumberland Valley Bed & Breakfast Association is planning a fund raiser during the month of March. The members, including the Red Cardinal B&B, are asking their guests to make a donation to the Red Cross and each B&B will make a matching donation. The details are being worked out, and I will tell you more about the event as it develops.

The Kitchen Shoppe and Cooking School
Day 21 - 27° - Snow - Shady Lane
There was a beautiful snowfall today which left about 3-5” on the ground. Billy and I enjoyed our breakfast with a view of the snow-covered fields from the kitchen window.
I had registered to take a cooking class today at The Kitchen Shoppe and Cooking School in Carlisle. Due to the snow, the class was cancelled. However, when the roads were clear, I took a ride over to the Shoppe to reregister and have a look around.
The Kitchen Shoppe is located in Carlisle, about 15 minutes from the Red Cardinal B&B. They offer a variety of cooking classes for adults and children. I have signed up for the Strudel Making Workshop. I can’t wait to serve my first home made Sour Cherry Strudel to the guests!
If you are a cooking aficionado, there is a wide selection of bakeware, cookware, gadgets and cutlery. Today was a rather gloomy day, so I enjoyed my time looking around the Shoppe. It is hard to imagine that a cook needs so many “essential” accessories in the kitchen. I’m sure I will need a panini grill or coffee grinder or crepe maker at some point!!

USAHEC Revisited
Day 20 - 30° - cloudy, cold - AHEC and Municipal Park
Billy and I revisited USAHEC (US Army Heritage and Education Center). I was curious about the new visitor center and we decided to take a tour. The newly opened visitor center houses a store, café, meeting rooms and exhibit hall.
The website posted 2 exhibits on the Civil War and 1 on General Omar Bradley that were currently on display. We viewed the 3 exhibits and found them informative. One of the Civil War exhibits was a combination of letters and photographs from a union soldier, which gives the war a personal connection.
Afterwards, we spoke with the some of the staff who were very enthusiastic about the programs that are offered at AHEC. There is a monthly lecture series on some aspect of the military and when the warmer weather comes, living history weekends and demonstrations are scheduled on the Heritage trail. A full line up of events can be found on the website. http://www.armyheritage.org/

Army Heritage Trail
Day 19 - 33° - cloudy and cold - Spring Meadows Park
Day 18 - 34° - sunny, cold and windy - AHEC
Yesterday Molly and I walked along the Army Heritage Trail. The trail is about a mile and weaves through a series of exhibits and markers on various eras of the U.S. Army history.
The trail is part of a larger complex called USAHEC (United States Army Heritage and Education Center). This is the Army’s primary research facility in the country. It is being developed in stages. Right now there is Ridgway Hall that houses a research library and archival material for the Army. The reading room in the library is open to the public. A second building that opened recently is the Visitor center which houses a gallery, shop, café and meeting rooms. There are a couple of more phases in the works. The center is about a 15 minute drive from the Red Cardinal B&B.

Ice Cream and Cake
Day 17 - 43° - rainy, cloudy - Spring Meadows Park
Billy, Molly and I went for our walk in between downpours. Since it was such a gloomy day, we decided to brighten it a bit and treat ourselves to ice cream at Brusters. This is a local creamery where the homemade ice cream is delicious. If you are there when it is raining or snowing, you get the second scoop of ice cream FREE! Unfortunately, when we arrived, it had stopped raining, but Billy got the second scoop of Rasberry Chocolate Truffle in a waffle cone anyway!
We go to the Brusters in Dillsburg about 15 minutes away; there is one in Carlisle as well.
The cranberry coffee cake got a “thumbs up” from our guests. So here is the recipe as promised.
1 ½ cps fresh cranberries
2 Tbsp chopped walnuts
1 tsp grated orange rind
½ cup butter, softened
½ cup packed brown sugar
2 Tbsp orange juice
¼ tsp cinnamon
1½ cups flour
1 tsp baking powder
1 cup granulated sugar
1 tsp vanilla
1 egg
½ cup buttermilk
For the Glaze
1 cup confectioners’ sugar
1 tsp melted butter
2 TBsp oj
1. Preheat oven to 350°. Coat a 9 “pan with cooking spray and dust with flour.
2. Combine cranberries, walnuts and OJ.
3. Melt 2 Tbsp butter. Stir in brown sugar, oj and cinnamon. Cook for 3 minutes. Pour into the pan. Sprinkle with cranberry mixture.
4. Whisk flour, salt and baking powder in a bowl. Beat granulated sugar and remaining butter until creamy. Add vanilla, egg, buttermilk and flour mixture. Spoon over the cranberries.
5. Bake 40 minutes. Cool in pan for 5 minutes. Invert onto a rack to finish cooling. Make the glaze and drizzle over the cake.

Municipal Park
Day 15/16 - 27° - cold, sunny - Municipal Park
Molly and I are taking our afternoon walk at Municipal Park. This park is connected to Spring Meadows Park by a trail that runs along the perimeter of the Belt Farm.
We are having guests this week at the Red Cardinal B&B. Marcia and Paul have been here several times, so they are more like friends than guests. I am going through the last minute check list in my mind to make sure everything is in order prior to their arrival.
One item on the checklist is the breakfast menu. Breakfast at the Red Cardinal B&B includes a fruit cup, entrée with juice, coffee or tea, a fresh bread basket, and coffee cake.

King of Prussia Mall
Day 14 - 30° - cold, cloudy - Spring Meadows Park
I don’t see my breath yet, but it is cold. Molly and I are getting our walk in before the “playoffs” begin at 4:30 pm. Billy is a Patriots fan, so the big game we will be watching begins at 8 pm.
This week, day 12 & 13 I was in Philly to visit family and one of my walking days was spent at the King of Prussia Mall. http://www.kingofprussiamall.com/.
The King of Prussia mall is the largest mall in America. The Mall of America is larger by square footage, but King of Prussia has more stores (over 400)!! The mall has two floors and two separate sections - the Court and the Plaza. There is even a shuttle that goes from one place to the other.
If you love to shop, then I would say this is a destination that you wouldn’t want to miss. It has every store imaginable, from Neiman Marcus, Nordstram’s, Lord & Taylor to Salvatore Ferragamo, Coach, Victoria’s Secret and GameStop. Of course there are several foodcourts, because you will definitely need to rest.
I was taking my 93 year old mother shopping as she received a couple of gift certificates for Christmas. She is a very young 93 old, and fits the cliché, “shop ‘til you drop” perfectly. However, we did limit our spree because I would be the first to drop!
The King of Prussia Mall is a 2 hour drive from the Red Cardinal B&B. Simply take the Pennsylvania turnpike from Carlisle to King of Prussia. It is easy on and easy off. If you feel "guilty" for bringing your partner, who isn't into shopping as much as you, the Valley Forge National Park is nearby.
When you return, we will refresh you with homemade snacks and a delicious beverage.

Lerew Road (Day 11)
Day 11 - 48° - cloudy, rainy - Lerew Road
Today I am walking along Lerew Road, which is my favorite place to walk. It is quiet, scenic and I have the most interesting neighbors.
As I walk down the road, I pass my neighbor’s house. Amy, Isaac and their 7 children live on the farm adjacent to our property. They have a few hundred acres and about 250 cows. Most of their land is farmed for animal feed.
They are a wonderful family. Each member, from the youngest to the oldest, has chores around the farm. Mary, the oldest daughter, can do just about anything - sew, cook, can, crochet, tend the cows, farm, and drive the farm equipment. I am in awe! Everytime I stop in to say hello, they are so welcoming; I always go away with a smile on my face and a new tip!
Further on down Lerew is the home of PJ and Gene. PJ Heyman owns and operates a shop in Boiling Springs - The Village Artisans Gallery. This gallery is “..nationally recognized as a treasury of American craftsmanship and artistry.” If you are looking for a unique, one of a kind gift, this is where to shop.
Then there is the home/shop of Ed Campbell. The shop is known as the Chimneys. It is a grand house and Mr. Campbell is a master violin maker who has been at his craft for nearly ½ century.
There is also a nationally recognized violin-making apprenticeship program on the premises.
We have had guests who have taken the “tour” with Mr. Campbell and found it fascinating.
As I come to the end of the road there is the Belt farm. Patrick Belt farms the “homestead” which is a couple of hundred acres. His land is used to grow produce for his roadside stand or for the auction. Patrick prides himself on having his corn ready before the other farmers and having the “sweetest” corn in the county. I can attest to that!
Now it is time to head back for a hot cup of tea; depending on who is “out and about”, I could make this walk in ½ hour or 2! That is why it is my favorite walk.

There is also a nationally recognized violin-making apprenticeship program on the premises.
We have had guests who have taken the “tour” with Mr. Campbell and found it fascinating.
As I come to the end of the road there is the Belt farm. Patrick Belt farms the “homestead” which is a couple of hundred acres. His land is used to grow produce for his roadside stand or for the auction. Patrick prides himself on having his corn ready before the other farmers and having the “sweetest” corn in the county. I can attest to that!
Now it is time to head back for a hot cup of tea; depending on who is “out and about”, I could make this walk in ½ hour or 2! That is why it is my favorite walk.

Pennsylvania Farm Show
Day 10 - 40° and sunny - Spring Meadows Park and Pennsylvania Farm Show Complex
Today started off with a brisk walk with Molly and Billy at the park before we headed off to the Pennsylvania Farm Show http://www.farmshow.state.pa.us/. We were meeting our friends Lance and Doris.
The Pennsylvania Farm show is the largest indoor agricultural exposition in the country and it is FREE! The show, located in Harrisburg, is about 20 minutes from the Red Cardinal B&B and runs through this weekend. The 96th annual show is expected to attract over 400,000 visitors, and the 4 of us will be part of the crowd.
Billy and I have attended the farm show since we moved here in 2003. There are so many facets of the agricultural industry in Pennsylvania, and you can see it all under one roof - agricultural school representatives, riding events, animals, auctions, 4H clubs, farms, cooking demonstrations and produce of all kinds.
Since we moved to Carlisle, we have developed a greater appreciation for the agricultural community. We live on a country road where there are large farms or neighbors who grow their own food. This community works tirelessly and they are proud of what the land has to offer them. We have learned so much, and now we raise our own produce to use in our breakfasts at the B&B. We even bought chickens this year for “fresh eggs”.
It took us about 4 hours to get through the show, so that was a good walk for the day.

A New Experience
Day 9 - 28°and partly sunny, mild - Spring Meadows Park
Molly and I took our walk early today as I had to attend a meeting of the Cumberland Valley B&B Association. It was a busy morning at the park and we saw some “regulars” as we made the loop.
I was thinking about the Association which is comprised of about 9 B&Bs from the surrounding area. The B&Bs are all different as are the innkeepers. The common thread among the innkeepers is that they enjoy people. When Billy and I joined the association, the innkeepers couldn’t have been more friendly, welcoming and helpful. Their attitude kept us going the first year.
If you have never stayed at a B&B before, I encourage you to make it part of your travel plans this year. Sometimes people don’t book a B&B because they don’t think about it. B&Bs are so varied and I am sure that you will find one that meets your needs.
We had a guest who put it this way, “Do you remember your first kiss? Who doesn’t. This (a stay at the Red Cardinal B&B) was our first B&B experience and it’s just like that first kiss….”

Carlisle Barracks Golf Course Loop
Day 8 - 42°, partly cloudy, mild - Carlisle Barracks Golf Course
Today I took the 2 mile loop around the Carlisle Barracks Golf Course. My walking companions today were Molly and my husband, Billy. This is a pleasant walk, not much of a grade, and you have the “entertainment” of watching the golfers. When I walk with Billy, it is better yet, as I get a running commentary on the “swing” of each golfer.
The Carlisle Barracks Golf Course is open to the public and you can find more information about the course at http://www.carlislemwr.com/rec-a-fitness/golf. If you stay at the Red Cardinal B&B, we can even provide a set of clubs for you to use.
As we make the loop, the conversation is about the Steelers/Broncos game. Central Pennsylvania is definitely Steelers territory, and though Billy is a “Patriots” fan, he enjoys the playoffs. The winner of this game plays the Patriots next week. So for now it is “Go Steelers”!

Is It Really Winter?
Day 7 - 54° and sunny - Spring Meadows Park.
Molly and I finished the day with a walk in the park. It was lovely out, and as we walked, I reflected on a wonderful 2 days Billy and I spent with our friends, Lance and Doris.
Billy and I went to Rehoboth Beach, Delaware, and I was able to walk for day 5 & 6 on the boardwalk along the Atlantic Seaboard. It was 64°, sunny, and hard to believe that the calendar read, January 5. Billy, Lance and Doris were my walking companions and that made the walk so much fun. We always have plenty to talk about, and that usually doubles the time we walk.
Rehoboth is about a 4 +/- hour drive from Carlisle through the back roads of Lancaster County. We enjoy the ride as much as we enjoy being at the shore.
We also visited Berlin, a town inland from the beach. It reminded me a lot of New Oxford, PA; a quaint town with many antique shops. While we were there having a pastry break, we met Eric Swick, the innkeeper/chef of a newly opened Bed & Breakfast in Berlin called the Waystead Inn. (http://www.waysteadinn.com/). We didn’t have time to check it out, but it looked glorious.
So if you are coming north for the car show this summer and are combing it with a vacation, you might want to stay around the Rehoboth Beach area, then head on up to the Red Cardinal B&B.

Molly
Day 4 - 28° and cloudy - Spring Meadows Park
My daily walking companion is Molly. She is our 8 year old border collie. Billy and I got Molly when we moved to Carlisle from Cape Cod, Massachusetts. She was 10 weeks old. She is an excellent companion as she loves to walk and has plenty of energy. Today we are walking at Spring Meadows Park.
Molly is a favorite with our guests at the Red Cardinal B&B. She greets every guest, and is with them from the time they arrive until their departure. If they come in the house, she comes in; if they go out; she goes out. When they have breakfast on the patio, she is nearby. Molly has a great understanding of the guests. If they want to admire her from a distance, she will keep her distance. A few guests have even offered to take her home with them. But of course, that would never happen.
So when you come to the Red Cardinal be prepared to be greeted by Molly.

Walking in the New Year
As the New Year begins, I was wondering what resolution to make. I was trying to make one that would be “all encompassing”; one that I could enjoy physically, socially and spiritually. The first thing that came to my mind was walking. I love to walk. So I decided to commit myself to walking every day during this coming year.
This way, I can describe some of the wonderful places that you might visit during your stay at our B&B. Or perhaps I can share an event or a recipe that comes to my mind while I am “out and about”.
